Head Chef - Jamie Burton
New to team Phoenix Jamie is looking to shake things up a bit with his eye for beautiful plates and creation of flavours. His attention to detail, passion and enthusiasm for cooking is exactly what we represent at the Phoenix. We are proud to welcome him as our new head chef at the Phoenix.
Jamie started out in construction and made a dramatic change into the hospitality sector realising quickly that he had found his “niche in life”. He started off working in a small bistro using fresh and local ingredients, an ethos he has maintained throughout his career. He also has a strong belief in sustainability trying to utilise local ingredients across the menu to limit waste.
Jamie has evolved as a chef learning and fine tuning his skills along the way. From his time at Hibiscus (a former 3 michellin star restaurant which reached top 50 status in the world) to the many awards won at The Cock. He has also competed in competitions himself picking up medals from bronze through to gold.
The Cock was somewhere Jamie started his career off. Their success helped create the drive to learn and develop his skillset as a chef. More recently whilst working at Fitzbillies he was able to use the restaurant in the evenings to create pop up restaurants.
Jamie fits in perfect at the Phoenix and we can’t wait for you to try some of his delicious food and put all his hard work into his new head chef position.

Breakfast is available every day, 9:30am-11am. Lunch is available Monday to Saturday, 12pm-3pm
Our bar menu is available Mondays, 12pm-3pm and Tuesday to Saturday, 12pm-3pm and 6pm-9pm. Br snacks are available Monday to Saturday, 12pm-9pm
Our dinner menu is available Tuesday to Saturday, 6pm-9pm
Sundays our kitchen closes at 4pm.
